藍帶雞排 Chicken Cordon Blue

材料: Ingredients

1) 去皮雞胸肉 2 片 skinless chicken breast 2 pcs
2) 火腿 2 片 ham 2 pcs
3) 披薩起司 3 湯匙 pizza cheese 3 tbsp
4) 麵粉 半杯 flour 1/2 cup
5) 蛋 (打散) 1 個 egg (beaten) 1
6) 麵包粉 1 杯 bread crumbs 1 cup

調味料: Seasonings
1) 鹽 半茶匙 salt 1/2 tsp
2) 胡椒粉 少許 pepper little

作法: Method
1) 用刀的尖端切入雞胸肉中間, 使雞肉形成一個口袋狀, 撒上鹽和胡椒粉調味, 醃約10 分鐘。Slice a cut into chicken breast to form a pocket shape. Marinate with seasonings for 10 minutes.

2) 把火腿片放入雞肉中間, 再將披薩起司也塞入雞內中間, 封口處用牙籤叉住。Place ham into chicken pocket, then stuff cheese in. Seal the opening with toothpick.

3) 雞排先拍上麵粉, 再沾上蛋汁, 最後裹上麵包粉。Coat chicken breast with flour, then dip in beaten egg, finally, coat with bread crumbs.

4) 炸油 4 杯燒至 7 分熱 (140度C), 放下雞排, 用中小火炸約 2 分鐘, 撈出。Heat 4 cups of oil to 140C, deep-fry chicken over medium low heat for about 2 minutes. Remove.

5) 開大火把油燒熱, 再炸約 20 秒鐘, 撈出, 瀝乾油分, 排放入碟中。Turn to high heat to reheat oil, deep-fry for 20 seconds more. Remove and drain off the oil, arrange on a plate.
