蝦仁芙蓉蛋 Fu-Rung Style Fried Eggs with Shrimps

材料: Ingredients

1) 蝦仁 3 兩 Shrimp (no shell) 110 g
2) 雞蛋(打散) 3 粒 Egg (beaten) 3 pcs
3) 紹興酒 1/2 茶匙 Shaohing wine 1/2 tsp
4) 蔥 (切細粒) 1 條 Scallion (Finely chopped) 1 pc
5) 油 2 湯匙 Vegetable oil 2 tbsp
6) 鹽 1/2 茶匙 Salt 1/2 tsp
7) 鮮奶 1 湯匙 fresh milk 1 tbsp
8) 生粉 2 湯匙 cornflour 2 tbsp

做法: Method

a) 去掉蝦仁的腸子, 用生粉洗掉蝦仁黏黏的汁液, 洗乾淨, 擦乾備用。 Devine the shrimps and use cornflour wash them. Pat dry.

b) 把雞蛋、蔥粒、鹽和鮮奶拌勻。Mix eggs, chopped scallion, salt and fresh milk together.

c) 用中火把油燒熱, 把蝦仁炒到 5 分熟, 加入紹興酒炒香到 8 分熟。Use medium heat to bring the oil hot, fry shrimps to medium, add in Shaohsing wine and 80% done.

d) 把做法 (b) 倒在做法(c)上, 兩面煎到微黃即可。Pour in method (b) on top of method (c), fry till both sides are slightly brown and serve.
