冬菇芥菜鴨湯 Mustard Green with Mushroom and Duck Soup

材料: Ingredients

a) 米鴨 半隻 Duck 1/2
b) 冬菇 三粒 Dried Mushrooms 3
c) 大芥菜 一棵 Mustard green 1
d) 水 十杯 Water 10 cups
e) 鹽 適量 Salt some

作法: Method

1) 米鴨洗淨 Clean the duck
2) 將鴨斬成大件 Chop the duck into large piece
3) 放鴨件入滾水內汆水備用 Blanch the duck in boiling water. Set aside
4) 冬菇泡軟 Soak the mushrooms
5) 再將冬茹切成四塊 Cut the mushrooms into 4 pieces
6) 大芥菜洗淨切大片 Cut the clean mustard green into large piece
7) 湯煲注入清水及所有材料 Add water and all ingredients into a pot
8) 先用大火煲滾 Bring to boil over high heat
9) 後再轉慢火熬煮一小時 Simmer for 1 hour
10) 下鹽調味即成 Season with salt

Note: Instead of Duck, Chicken can be replaced. 以雞塊替之亦可。
