台式滷肉飯/滷蛋/滷雞/滷豆腐 Spicy Chopped Pork over Rice

材料: Ingredients

1) 絞肉 六兩 Chopped Pork 6 oz
2) 紅蔥頭 五粒 Shallots 5 pcs
3) 白飯 六人份 6 servings hot & precooked rice

調味料: Seasoning

1) 米酒 一大匙 1 tbsp rice wine
2) 醬油 半杯 1/2 cup soy sauce
3) 水 一杯半 1 1/2 cup water
4) 糖 一小匙半 1 1/2 tsp sugar
5) 味精 半小匙 1/2 tsp MSG
6) 五香粉 1/8小匙 1/8 five-spice powder

做法: Method

a) 紅蔥頭切除鬚根, 剝去外皮, 切片。Cute off roots and remove skin from shallots, then mince.
b) 豬油四大匙, 以中火將紅蔥頸炒香呈金黃色, 再放入絞肉略炒, 加進所有調味料燒開, 改用小火燒煮約一小時即成。Heat pan and 4 tbsp oil; saute shallots until golden, and add chopped pork; briefly stir-fry and add all seasoning, cook covered 1 hour over low heat. Portion meat over rice servings and serve.
c) 可用同樣調味品及做法做成「滷蛋」, 「滷雞」或「滷豆腐」皆可。 You may use the same seasoning and method to cook "Spicy hard boiled eggs", "Spicy chicken" and "Spicy fried bean-curd" etc.
d) 可用米粉或麵條替代飯。 You also can use rice noodles or noodles to substitute rice.
