提拉米蘇 (星島中文台:馬可、靜平提供) (01/20/14)

食材

Mascarpone 起司500克
鮮奶油80~100克
蛋黃4顆
砂糖50克
無糖咖啡150 c.c.
卡魯蛙咖啡酒300 c.c.
可可粉酌量

作法

1 蛋黃+砂糖用打蛋器打到乳白色,隔水加熱後+一半的咖啡酒
2 鮮奶油打到硬性發泡+作法1+軟化的起司拌勻 -> 提拉米蘇的餡做好哩~
3 無糖咖啡+剩下的咖啡酒混和後~把手指餅乾和巧克力海綿蛋糕很快的在裡面浸一下
4 手指餅乾放在保鮮盒的最下層~然後上面鋪一層餡~然後再鋪一層蛋糕~最後再鋪一層餡~蓋上蓋子放冰箱
5 要吃之前用過篩的方式灑上可可粉~

  1. I like to make tiramisu but the cheese is so expensive. So, I made by myself and it is very good.

    500g Heavy cream (from Costco), 1/4 tsb cream of Tartar

    cook and stir heavy cream to 120C and add cream of tartar, continue to cook it until 190C. turn off the heat and stir it for 20 minutes. pure it in to a bowl with cheese cloth on it. cool down and move it to refrigerate. It will become Mascarpone cheese after 4 days. The coffee wine could use dark coffee add brandy.

    The ladyfinger could be replaced by sponge cake. It will be very very very good.
