年菜必備的台式傳統古早味油飯 (01/31/22)

  

Ingredients食材:

• Long glutinous rice長糯米1cup

• Short glutinous rice圓糯米1cup

• Pork belly, sliced 五花肉200g(切絲)

• Shitake 香菇10 pieces

• Dried Shrimps 乾蝦米 20g (soaking in the cooking wine )

• Dried shallots 油蔥酥 5Tbsp

• Soy sauce 醬油90ml

• Sesame oil香油2 Tbsp

• Sugar 糖3 tsp

• White pepper powder胡椒粉 1 Tbsp

• Five spice powder五香粉 2 tsp

• Shitake water香菇水 700ml

Sauce醬汁:(it’s optional )

• Pork lard豬油 100g

• Sticky soy sauce醬油膏 100ml (如果沒有買到醬油膏,可改用蠔油,建議先減半用量,如果味道不夠再調整)

• Cooking wine米酒 50 ml

• Water水 50 ml (稀釋鹹度用,可自行調整用量)

• Soy sauce醬油 50 ml

• Sugar糖 10~12 Tbsp

• Coriander for garnish香菜
